A couple of weeks ago Chris Wildman from Paganum sent through a couple of types of their Yorkshire Chorizo .We got round to trying them whilst enjoying an evening of audio baron ratings.
We really both types of this Chorizo and I particularly liked the freshness of them, they had some softness to them but still maintained that slightly chewy edge that you are looking for in cured meats (or that I look for in them anyway).
